    Inspector note: FOOD NOT PROTECTED FROM CONTAMINATION DURING PREPARATION AND STORAGE. OBSERVED BACON AND SALMON BEING CURED IN THE REFRIGERATOR WITHOUT WRITTEN APPROVAL FROM CDPH. MUST SUBMIT A WRITTEN HACCP PLAN TO CDPH AND RECEIVE APPROVAL BEFORE MEATS CAN BE CURED IN THE ESTABLISHMENT. MANAGER WAS TOLD THAT THE FOOD COULD BE TAGGED UNTIL THE HACCP PLAN WAS APPROVED, BUT HE VOLUNTARILY DISCARDED 38# OF FOOD WORTH $215. ALSO OBSERVED ICE IN THE ICE MACHINE NOT PROTECTED FROM CONTAMINATION DURING STORAGE. OBSERVED DISCOLORATION AND A SLIMY SUBSTANCE ON INTERIOR CONTACT SURFACES OF THE ICE MACHINE. ICE MACHINE WAS TAGGED HELD FOR INSPECTION. MUST CLEAN AND SANITIZE ALL INTERIOR SURFACES OF THE ICE MACHINE. DO NOT USE THE MACHINE UNTIL THE HELD FOR INSPECTION TAG HAS BEEN REMOVED. SERIOUS VIOLATION 7-38-005A.
