    Inspector note: Improper cooling method for hot TCS foods. Observed a Large container of 30 lbs of cooked beef and gravy being cooled down in walk-in cooler tightly covered in deep 8 inch pan where fat has created a crust on top prevent proper heat exchange and cooling within required time. Instructed manager to break down large food into smaller portions and cover loosely to facilitate cooling down process. Priority foundation violation 7-38-005.
