  Inspector note: OBSERVED A DEAD COCKROACH ON THE BOTTOM SHELF OF THE BASEMENT FOOD PREP TABLE WHERE OIL IS STORED. • OBSERVED EVIDENCE OF RODENT ACTIVITY (APPROX. 45 RAT DROPPINGS AND 35 MOUSE DROPPINGS) IN THE FOLLOWING AREAS: OBSERVED 10 RAT DROPPINGS AT THE BOTTOM OF THE BASEMENT STAIRCASE AND 20 DROPPINGS UNDER THE BASEMENT STAIRCASE IN THE SMALL ROOM THAT WAS PREVIOUSLY A WASHROOM, 5 DROPPINGS BEHIND THE OLD MIXER ON THE FLOOR OF THE BASEMENT STORAGE AREA AND 10 DROPPINGS UNDER A STORAGE TABLE AGAINST THE WALL. OBSERVED 1 MOUSE DROPPING INSIDE OF THE PIZZA OVEN LEDGE, 4 DROPPINGS IN THE FOOD PREP AREA CORNER UNDER THE DOUGH SHEETER, 5 DROPPINGS UNDER THE CORNER OF THE BAR UNDER THE 3-COMPARTMENT SINK, 5 DROPPINGS UNDER THE 1-DOOR COOLER AT THE BAR AREA, 2 DROPPINGS AT THE CORNER OF THE STAGE ON THE FLOOR, 5 DROPPINGS IN AND AROUND THE REAR FIREPLACE AREA, 5 DROPPINGS BEHIND THE VENDING MACHINE, 1 DROPPING AGAINST THE WALL IN THE DINING AREA AND 7 DROPPINGS ON THE KEG PLATFORM INSIDE OF THE SIDE ENTRANCE DOOR NEAR THE STAIRCASE TO THE 2ND FLOOR. MANAGEMENT INSTRUCTED TO CLEAN AND REMOVE ALL RODENT DROPPINGS FROM ALL AFFECTED AREAS. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO ELIMINATE THE PEST ACTIVITY THROUGHOUT. PRIORITY FOUNDATION VIOLATION 7-38-020(A). CITATION ISSUED.
