Found cardboard used as a floor mat and as compressor cover on cooler in front prep area 1st floor. Must remove. Must not use any porous materials. All surfaces must be smooth and easily cleanable. Must maintain same.

    Inspector note: Found dust build up on fan covers inside 2 door cooler in hallway. Must remove and santitize. Found bulk storage containers (for onions, potatoes, etc.) on 2nd floor with dirt accumulation. Must clean and sanitize. Found excessive grease build up on lower interior of fryer in kitchen on 2nd floor. Must detail clean and sanitize. Must maintain all.

    Inspector note: Observed employees using hand sinks as prep sinks in the front prep area, and in coffee bar. Must install exposed, dedicated hand sinks in front prep area (behind counter / where pizzas and sandwiches area made) and in coffee bar. Must install exposed hand sink easily accessible to dish room (dish room has a sprayer sink and a dishwasher). Found bar 3 compartment sink with leak from right basin. Must repair and maintain same.
