    Inspector note: FOOD NOT PROTECTED FROM CONTAMINATION DURING STORAGE AND DISPLAY. OBSERVED VACUUM PACKAGED FOODS (MEAT, STEAK, ETC ) STORED IN REACH-IN REFRIGERATORS, AND WALK-IN FREEZER WITHOUT A IDPH OR CDPH APPROVED HACCP PLAN ON THE PREMISES. THE VACUUM PACKAGING MACHINE HAS BEEN TAGGED AND HELD FOR INSPECTION. MANAGEMENT INSTRUCTED THAT A CDPH APPROVED HACCP PLAN IS NEEDED BEFORE VACUUM PACKAGING ANY FOOD. MANAGEMENT DISCARDED THE VACUUM PACKAGED FOODS. CONDENSATION DRIPPING ONTO OPEN AND SEALED FOOD ITEMS IN THE WALK-IN FREEZER. MANAGER SAID THE FREEZER WAS ON DEFROST MODE BUT THE CONDENSATION WAS NOT BEING CONTAINED IN THE DRIP PAN. ALL FOOD ITEMS UNDER THE DRIPPAGE WERE DISCARDED. INSTRUCTED TO NOT STORE FOOD ITEMS UNDER THE CONDENSER UNTIL UNIT IS REPAIRED- MAINTAIN SERIOUS VIOLATION 7-38-005A
