    Inspector note: DURING INSPECTION FOUND A LARGE LONG STAINLESS STEEL PAN HOLDING POTENTIALLY HAZARDOUS FOODS (CUT ROMAINE LETTUCE) AT 57.9F WITH ICE WATER UNDERNEATH IN ANOTHER LARGER STAINLESS STEEL PAN IMPROPERLY SET-UP. THERE WASN'T ENOUGH ICE BELOW TO ADEQUATELY MAINTAIN THE ROMAINE LETTUCE AT PROPER TEMPERATURE OF 40F AND BELOW. POTENTIALLY HAZARDOUS FOODS MUST ALWAYS MAINTAIN 40F AND BELOW. PRODUCT WAS VOLUNTARILY DISCARDED BY MANAGEMENT. APPROXIMATELY 3LBS OF LETTUCE AT A COST OF $10.00. THIS ITEM WAS LOCATED ON TOP OF THE FRONT SERVICE SERVING COUNTER OFF TO THE SIDE.
