    Inspector note: DURING INSPECTION FOUND HOT WATER TEMPERATURE AT THE 3-COMP SINK TO BE 85F. MANAGEMENT CALLED PLUMBER TO REPAIR PROBLEM. PLUMBER ARRIVED AT 11:50 A.M. HOT WATER AT THE 3-COMP SINK MUST ALWAYS BE AT A MINIMUM OF 115F DEGREES IN ORDER TO PROPERLY WASH, RINSE AND SANITIZE. THE PLUMBER FOUND THE WATER HEATER THERMOSTAT SET AT 90F. PLUMBER CORRECTED PROBLEM. AT 1230PM HOT WATER TEMP AT 3-COMP WAS 120F. ALSO NOTICED HOT WATER HEATER TANK HAS A 25 GALLON CAPACITY. RECOMMEND PREMISES OBTAINS A LARGER HOT WATER HEATER FOR BUSINESS OPERATION. HAS A CRITICAL CITATION ISSUED.
