  Inspector note: OBSERVED GREASE TRAP LOCATED WITHIN FLOOR UNDER 4 COMPARTMENT SINK LOCATED IN MIDDLE OF STORE WITH A LARGE GAP AROUND GREASE TRAP APPROXIMATELY 3 INCHES WIDE. FOOD DEBRIS AND DIRT HAVE FALLEN INTO THE GAP AND IS UNABLE TO BE PROPERLY CLEANED. GREASE TRAP MUST BE REMOVED FROM FLOOR AND REINSTALLED SO THAT THERE IS NO GAP AROUND EDGE AND IT IS FLUSH WITH FLOOR.
