    Inspector note: Observed the following potentially hazardous foods at improper temperatures: 1.5lbs Baked potatoes, 52.1F, 20lbs Raw Chicken, 55.2F, 11lbs, Ribs 55.2F, 1.5lbs Raw Shrimp, 59.2f and 20lbs, Raw Fish 59.2F. All said items were located in the 4 door cooler near the front cook line. Manager voluntarily discard and denatured a total of 54lbs of product, at a total value of $413.00. Instructed manager that potentially hazardous foods must be maintained to the proper temperature, 40F or lower for cold foods and 140F for hot foods. Critical Violation # 7-38-005 (A)
