    Inspector note: All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. OBSERVED CROSS CONTAMINATION BETWEEN RAW FOODS (POULTRY, PORK, SHRIMP AND BEEF) AND RAW FOODS AND READY TO EAT FOODS (TOMATOES AND PORK/BEEF). OBSERVED RAW CHICKEN, SHRIMP, PORK AND BEEF STORED TOGETHER AT THE COOK'S LINE. THE FOOD IS STORED ON ICE AND THERE WAS NO SEPARATION BETWEEN RAW CHICKEN AND RAW BEEF, PORK AND SHRIMP. OBSERVED BAGS OF ICE STORED ON TOP OF THE RAW FOOD WITH BLOOD AND FOOD DEBRIS/JUICES ON THEM. ALSO OBSERVED A TOMATO STORED IN CONTACT WITH THE RAW FOODS. MANAGEMENT DISCARDED ALL THE AFFECTED FOOD AND WAS INSTRUCTED TO KEEP ALL RAW FOOD SEPARATE FROM OTHER RAW FOODS AND READY TO EAT FOODS. MANAGEMENT DISCARDED 10# OF FOOD WORTH $40. CRITICAL VIOLATION 7-38-005A.

OBSERVED APPROXIMATELY 20 LIVE FRUIT FLIES ON THE WALLS BELOW THE DISHMACHINE, ON THE CLEAN DISH STORAGE RACK AND ON THE CHEMICAL LINES LEADING TO THE DISHMACHINE. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO MINIMIZE OR ELIMINATE THE PEST ACTIVITY. SERIOUS VIOLATION 7-38-020.
