    Inspector note: All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. OBSERVED DURING INSPECTION EMPLOYEE TAKING OFF USED RUBBER GLOVES, LEAVE THE FOOD PREPARATION AREA TO RETRIEVE MANAGER UPON MY INTRODUCTION. THEN PUT ON THE USED RUBBER GLOVES PREVIOUSLY REMOVED. ALSO OBSERVED ANOTHER EMPLOYEE RETURNING FROM THE WASHROOM, ENTER THE FOOD PREPARATION AREA, WIPE HANDS ON TOWEL PROVIDED AT EXPOSED HAND SINK WITHOUT WASHING HANDS, THEN PROCEED TO PUT ON PLASTIC GLOVES TO THEN PREPARE SLICING FOODS. WHEN INSTRUCTED MANAGEMENT TO HAVE EMPLOYEE IMMEDIATELY WASH HANDS TO CORRECT CRITICAL VIOLATION, THE EMPLOYEE PROCEEDED TO WASH HANDS IN THREE COMPARTMENT SINK. REVIEWED PROPER HAND WASHING PROCEDURES WITH CERTIFIED MANAGER AND POSSIBLE MEANS OF CROSS CONTAMINATION.
