THE DISHMACHINE CYCLE CONTINUOUSLY RUNS WITHOUT STOPPING; EMPLOYEES HAVE TO MANUALLY TURN OFF THE MACHINE. INSTRUCTED MANAGEMENT TO REPAIR AND MAINTAIN THE MACHINE WITH A FINAL RINSE TEMPERATURE OF 180F. DISHMACHINE WAS TAGGED AND CANNOT BE USED UNTIL REINSPECTED BY CDPH. ONCE PROPERLY SANITIZING MUST FAX A LETTER TO 312-746-8040. MUST PROPERLY SET UP THE 3-COMPARTMENT SINK FOR PROPER WASHING, RINSING, AND SANITIZING. CRITICAL VIOLATION 7-38-030
