Operator voluntarily discarded denature foods during inspection. Instructed must always keep potentially hazardous refrigerated foods at 40F or less during storage (and hot foods at 140F or higher). Lower door to reach in cooler not properly closed overnight. Door is now properly closed. Items on top of reach in cooler at 40F or less. Critical violation 7-38-005(a).
