    Inspector note: Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. OBSERVED THE HIGH TEMPERATURE DISHMACHINE IN THE 1ST FLOOR DISHWASH AREA IMPROPERLY MAINTAINED. FINAL RINSE TEMPERATURE WAS AT 155-160F. DISHMACHINE WAS NOT BEING USED AT THE TIME OF THE INSPECTION. ECOLAB SERVICE TECH ONSITE DURING THE INSPECTION TO REPAIR THE MACHINE. HE STATED THAT IT COULD NOT BE FIXED AT THIS POINT. A NEW BOOSTER HEATER WILL NEED TO BE INSTALLED. HE WOULD HOOK UP THE MACHINE TO A CHEMICAL SANITIZER UNTIL THE BOOSTER IS INSTALLED. MACHINE TAGGED HELD FOR INSPECTION. NO CITATION ISSUED. CRITICAL VIOLATION 7-38-030.
