Hot HoldingcriticalInspector note: Cooked chicken inside of the single door hot holding unit with a temperature of 94F. Cooked salmon with a temperature of 120F. Both foods were removed and reheated to 165F to enusre no bacterial growth.

The dispensor is not to be used until an approved test has been produced. Ensure lab results are returned with acceptable results (below 20) before using that particulr dispensor.
