Inadequate Facilities/Cooling MethodsInspector note: As observed during the inspection the storage of rice within a hotel pan set on top of a chill plate does not provide proper cold holding of the food product. In the future the rice must be held in another manner that provides proper cold holding. The rice was chilled and returned to service once it was below 41 F.
