Inspector note: The three-bay sink and hand sink basins to the Food 4 Thought food preparation kitchen are pitted. Whereas the establishment utilizes a quaternary ammonia sanitizer and nothing but hand soap is discarded to the hand sink it appears that the pitting is the result of a phyical defect. The pitting in the three-bay sink is severe enough that water is leaking through the pits into plastic trays set below the sink. The basins should be repaired or replaced to eliminate the leaking and provide an internal surface that is readily cleanable and does not represent a point of harborage for bacteria and other soil.

Official wording: Improper Maintenance of Walls/Ceilings
Inspector note: The walls within the food preparation area of the Food 4 Thought preparation kitchen are pitted. The pitting appears to be the result of the daily use and storage of pots pans and other utensils. A close inspection of the equipment in these areas revealed a trace transfer of gypsum paint and cellulose covering to the equipment. The gypsum is exposed in several of the wall pits. Whereas the gypsum and unpainted surfaces are not cleanable and are absorbent the wall surfaces within the food preparation area (three-basin sink and equipment storage areas) should be resurfaced. A more durable surface FRP for instance would potentially eliminate the need for annual expenditures on wall surface repair.
