Cold HoldingcriticalInspector note: tofu 60/pork 52 degrees/provide proper temperature of 41 degrees or below/product at temperature for under 2 hours/manager placed under refrigeration to 41 degrees 8/1/16 The tofu in the reach in refrigertor is 55F while the same tofu in the walk-in is 40F. The manager thinks they are changing the tofu water and adding warm water other items in the reach-in unit are below 41F. The manager discarded the tofu and instructed the chef to add cold water for storage.

Inadequate Facilities/Cooling MethodsInspector note: front counter/ice cream soft/provide proper freezer unit (pass) fried chicken 150 degrees/product is being cooled in large containers and stored in walk in 8/1/16 The filling for the spring rolls made the previous evening and cooling in a deep covered plastic container in the walk-in cooler is still 55F. Provide proper cooling methods to besure items cool from 140F to 70F in two hours and then from 70F to 41F in an additional four hours.
