Part of the hot holding buffet not turned on PIC turn it on. PIC stated it had been out for 1 hour and placed it on stove to re-heat at 165F with 1 hour. Rice on stove registered 118F. PIC stated it had been placed there 30 minutes ago and turned on stove to re-heat at 165F. Maintain all TCS foods at 135 or above.
