CoolingcriticalInspector note: The sauce made earlier in the day is cooling on the floor in the basement in deep containers at room temperature the sauce is still 76F. Properly cool items from 140F to 70F in two hours and then from 70F to 41F in an additional four hours.

Cold HoldingcriticalInspector note: The items in the refrigerators with broken gaskets are not in temperature; pasta 60F sauce from yesterday 67F. Provide proper cold holding of 41F or below (items were discarded by the manager because they were out of temperature for a an unknown amount of time)

PIC KnowledgecriticalInspector note: The certified food manager at this location works at another location. Provide a full time certified food manager at this location to supervise food safety and train the staff. 5/3/18 They have signed up two managers to take the servesafe class and the certified food manager is at the location today but they need to be taking active managerial control and monitoring critical control points. The refrigerators with broken gaskets are elevated today and all the food needed to be discarded.

The handle is broken off the upstairs undercounter unit and they are using a tied piece of plastic bag as a handle. Repair to provide a smooth cleanable durable handle. The shelving in the upright refrigerator and the bottom of the unit is rusting. Resurface or replace.

Provide proper sanitizer levels to be sure that items are getting cleaned and sanitized. The location is not for another few hours so the manager called the dishwasher company to come in and repair the machine before service. Email paperwork to show the machine was repaired before service.
