    Inspector note: The kimchi macaroni salad and other salad items stored within the refrigeration unit located by the wait station were at 46 to 47 F. The thermometer display to the open-air commercial unit was reading 35 F. BISD measured the interior ambient temperature to range between 41 and 43 F (rear & center of unit). It appears if the product was placed into the unit at proper temperature and stored at the rear of the unit it could maintain a proper temperature. The ownership must figure out how to maintain proper product temperature and institute policies that the staff can utilize to guarantee that the product is properly maintained during the day.

The floor must be maintained smooth durable non-absorbent and readily cleanable.
