    Inspector note: On the production line mango ube at 47F coconut mix in blender jars 60F grapefruit pulp 57F coconut in metal canisters 51F. There are a few reasons for these items to be outside of proper cold holding temperatures; one is that the staff is preparing the foods and then putting them directly from ambient into the cold holding units and not cooling them properly to 41F beforehand; the second is items on the counter are being held in ice baths that are too small don't have enough ice or the ice has melted. All the items per the person in charge had been prepared around 11am and were taken out of service after the observation and put into active cooling to get down to 41F. Train staff to properly cool foods before placing them into cold holding units and have larger vessels with more ice if not using active cold holding units for items on the counter.
