Cold HoldingcriticalInspector note: Pig heart shaved beef inside of the 2 door deli cooler with elevated temperatures of between 48-52F. Discontinue and ensure all potentially hazardous foods are being maintained at below 41F. PIC stated it had been in the deli style cooler for around 2hrs. PIC removed the meats and placed them into a refrigeration unit to bring the termperature down to below 41F.

Inadequate Facilities/Cooling MethodsInspector note: Cooked pig heart and other shaved meats inside of the 2 door deli cooler with elevated temperatures of between 48-57F. PIC stated the foods had been cooked around 2 hrs. prior and were placed into the deli style refrigerator to cool down. Discontinue and ensure proper cooling methods are in place. Meats that were out of temperature were removed from the cooler and placed on ice to help bring the temperature down to 41F.

Discontinue use unless unit is able to maintain a temperature of 41F an below. PIC to remove any potentially hazardous foods that are above 41F and place them into a refrigeration unit that is able to maintain a temperature of below 41F. Card board observed being used to line shleves in the back storage room. Dicontinue and ensure all surfaces are maintained cleanable durable and smooth.
