Make sure employees are testing every batch of rice and filling in the logs. The sushi rice tested between 4.5 and 4.8. Provide proper pH value below 4.4 according to their HACCP plan. (The rice was just made as the temperature of the rice was 133F. The manager was allowed to add vinegar to the rice and stir it properly and when he retested the rice the value was 4.2)
