Provide proper cold holding of 41F and ensure that items are being cooled to 41F before they are loaded into the front open air coolers. (The sandwiches were in the cooler for under an hour according to production records and were able to be cooled in the walk-in the breakfast items needed to be discarded. Thermometer used was verified accurate by calibrating with ice on site)
