    Inspector note: Catering order going out door with tuna at 56F.To go refrigeration registering 50F and sushi product inside registered 46-47F.Chicken on salad was at 60F.Roast beef at service station that was just prepped registered 46-47F.Hardboiled egg at 47F.Product being prepared for service is being put out for service rather than being properly chilled down to 41F as required.Catering order sitting around at room temperature at least 20-30minutes.Discussed techniques to help achieve requirement but this is actually a management issue that staff need to monitor and verify temperatures.Inspector had to tell management to have items removed from refrigeration(?).11-29-2011:Hard boiled egg out in to go refrigeration at 53F-54F.American cheese out in service case piled high at 47F.Back service salad refrigeration on wall reading 50F by hanging thermometer.Food product in unit and chicken reading 46F.PIC showed me logs that were instituted but not filled out for today with product out for service????
