    Inspector note: At time of inspection PIC did not have a testing device that worked for testing the sushi rice. When he did get it working it tested at 5.1. PIC could not provide any paperwork or HACCP plan approved. PIC will need to discontinue to make sushi until a HACCP plan has been provided to Health Division to review. 2=20-26 PIC was able to test the rice and had all the paperwork for the fish. We will need to see the results of the lab test. Please provide when you them them back.

    Inspector note: Low temperature dishwasher did not show any sanitizer on test strip and it did not change over the water to clean water to sanitizer. PIC will need to have it repaired and use three bay sink and disposable plates and silverware.

    Inspector note: PIC will need to review with all staff that works with the sushi to know how to test it properly. The test logged into the log book for the sushi rice was 11-25-25. List how many batches made each day. PIC at this time could not find the HACCP plan or any paperwork from the fish companys. General cleaning and organization of the locaion will need to be done. PIC should be testing the dishwasher each day. That was not working and you will need to use disposable until fixed.
