    Inspector note: Raw fish chicken as well as cooked chicken and tofu holding without means of temperature control at 50F at service area.I explained with PIC to rearrange his refridgeration so that the refridgeration can hold all of the phfs and that the raw vegetables do not necessarily need to be in the refridge but that the Phfs do.He rectified.Please continue to educate staff on propoer processes-Thankyou.

    Inspector note: Walk-in refridgeration reading 50F.Sauce that was in refridge was at 49.4F.PIC explained that the unit was constantly opened/closed during setup prior to service.Please monitor unit closely and if unit doesn't drop then it will need service.(Please remember that in general product that is at 50F for 2hrs will need to be discarded. If phf can be moved from unit and placed in other units then please do so.).
