Meat and pico had been in the unit from the previous night. PIC voluntarily discarded all foods out of temperature for an extended period of time. All other foods inside of the unit were at the proper temperature.

Nonfood-Contact Surfaces (C)Inspector note: Gasket around the first drawer of the 4 drawer cooler is not closing/sealing properly causing an elevated temperature in that specific drawer. Address and make any necessary repairs. PIC stated that the replacement gaskets have been ordered. High temperature dish machine is reading an error message when run. PIC is aware of the situation and a technician has been out to address the issue. If the unit is not operating properly the 3 bay sink is to be used until all repairs have been made.

Nonfood Contact Surfaces (C)Inspector note: Ice build up observed on the lowe sheelf of the 2 door Traulsen freezer. Defrost and clean to remove. Lower shelf of the single door cooler with top portion being used for bread has excess moisture. Address and clean to remove. Fan covers to the compressor of the beer walk-in cooler visibly soiled. Clean to remove. Surface of the 6 top burner below the salamander with excess carbon build up. Clean to remove.

Employees to use other additional hand sinks until repairs have been made. Drainage pipe to the hand sink near the walk-in coolers appears to be leaking. Address and make any necessary repairs. Underside of the last hand sink in the bar on the lower level appears to be leaking. Address and make any necessary repairs.
