(A)(2) and (B) Time/Temperature Control for Safety Food Hot and Cold Holding (P)criticalInspector note: Sliced cucumbers and dressings inside of the salad unit with elevated temperatures between 48-55F. Ensure all TCS foods are being maintaiend at below 41F. All foods were removed from the unit at the time of the inspection.

Food Storage Containers Identified with Common Name of Food (C)Inspector note: Several squeeze bottles filled with sauces and dressings have no labels. Provide.

Wiping Cloths Use Limitation (C)Inspector note: Soiled wiping cloths observed being left out on counter tops. Discontinue and provide a proper sanitizing solution.

Food Storage Prohibited Areas (C)Inspector note: Bag of onions observed being stored on the ground in the back hallway. Bags of oysters and other types of foods observed being stored on teh ground of the walk-in cooler. Discontinue and store all foods elvated a minimum of 6 inches off the ground.

Nonfood-Contact Surfaces (C)Inspector note: At the time of the re-inspection 3/28/2023 the small flip top salad unit was still not fiunctioning properly and with an elevated temperature of 55F. Discontinue use until repairs have been made or replace. All foods were removed at the time of the re-inspectin and placed into a refrigerator that was operating beoow 41F.
