    Inspector note: They are making the homefries daily by boiling the potatoes at night cooling in large reach-ins overnight and then cutting the potatoes in the morning. The establishment is very small and they have no walk-in cooler. At the time of the inspection the potatoes are 54F-64F and there was no change after fifteen minutes in the cooler. Discontinue cooking and cooling the potatoes unless there are changes to equipment and replace with already cooked and cut potatoes. (The potatoes were discarded by the manager)
