    Inspector note: OBSERVED LOW TEMPERATURE DISH MACHINE AT A SANITIZING LEVEL OF 0 PPM DURING THE INSPECTION. UTENSILS AND EQUIPMENT WERE BEING WASHED WHILE SANITIZING LEVEL WAS AT 0 PPM. INSTRUCTED TO ALWAYS USE TEST STRIPS TO PROPERLY TEST THE SANITIZING LEVEL AND ALWAYS MAINTAIN A CHLORINE SANITIZING LEVEL OF 50-100 PPM AT ALL TIMES AND TO RE-WASH ALL EQUIPMENT AND UTENSILS. SANITIZING BOTTLE WAS EMPTY DURING THE INSPECTION AND AN EMPLOYEE REFILLED THE BOTTLE, BY THE END OF THE INSPECTION LOW TEMPERATURE DISH MACHINE WAS SANITIZING AT 100 PPM. CRITICAL VIOLATION 7-38-030.
