SAID REPLACEMENT SHALL BE OF AN APPROVED (3) THREE COMPARTMENT SINK. 3-COMPARTMENT SINK SHALL BE CONSTRUCTED OF GALVANIZED METAL OF BETTER, SUITABLY REINFORCED AND OF SUCH THICKNESS AND DESIGN SO AS TO RESIST DENTING, BUCKLING, AND SLOPED SO AS TO BE SELF-DRAINING. 3-COMPARTMENT SINK MUST BE EQUIPPED WITH AN ATTACHED METAL DRAINBOARD, A GREASE INTERCEPTOR, AND HAVE RUNNING HOT AND COLD RUNNING WATER UNDER CITY PRESSURE. SINKS SHALL BE OF SUFFICIENT SIZE TO PERMIT COMPLETE IMMERSION OF THE UTENSILS TO BE WASHED AND SANITIZED THEREIN. SINK SHALL BE PROPERLY TRAPPED AND COMPLY WITH ALL OF THE REQUIREMENTS OF THE MUNICIPAL CODE.
