Dish Washing Facilities: Properly Designed, Constructed, Maintained, Installed, Located And OperatedInspector note: THE HIGH TEMPERATURE DISHMACHINE IS IMPROPERLY MAINTAINED. MACHINE IS NOT RUNNING ACCORDING TO MANUFACTURER'S SPECIFICATIONS. THERE IS NO SEPARATE WASH AND RINSE CYCLE. THE MACHINE ONLY CYCLES FOR 10-15 SECONDS. ACCORDING TO THE MANUFACTURER'S PLATE ON THE MACHINE, THERE SHOULD BE A 70 SECOND WASH CYCLE AND A 10 SECOND RINSE CYCLE. ALSO OBSERVED THE INSIDE OF THE MACHINE NOT CLEAN WITH A LAYER OF DEBRIS ON THE INSIDE OF THE MACHINE. MUST CLEAN INTERIOR OF MACHINE AND REPAIR IT SO THAT IT RUNS WITH A WASH AND RINSE CYCLE IN ACCORDANCE WITH MANUFACTURER SPECIFICATIONS. SERIOUS VIOLATION 7-38-030.
