MANAGEMENT INSTRUCTED THAT AN ADEQUATE SUPPLY OF HOT WATER OVER 110F IS NEEDED FOR PROPER DISHWASHING AND HANDWASHING. SUPERVISOR LOPEZ WAS ONSITE DURING THE INSPECTION. PREMISES HAS A 40 GALLON HOT WATER TANK LOCATED ABOVE THE MOP SINK. CRITICAL VIOLATION 7-38-030.
