    Inspector note: Observed potentially hazardous food store at improper temperature, in the following areas: -At room temperature under hotline front counter shelving unit. 98.7f, 3lbs of cooked shredded potatoes, at a value of of $1.45 -2 door front prep reach in cooler: 49.6f to 56.6f, 4.5lbs raw eggs, at a value of $10.00 48.9f, 3.5lbs of liquid eggs, at a value of $5.00 Cooler internal air temperature at time of inspection was 38.9f. Manager stated total weight of 11lbs at approximate value of $16.45 Manager voluntarily discarded/denatured said food. Instructed to keep all cold food at 40f or below and hot food at 140f above. Observed both cabinet doors under front counter exposed hand sink, broken and in poor repair. Instructed manager to repair and maintain at all times.

Instructed manager to resurface and or replace. Maintain at all times. Observed interior shelving unit under front exposed hand sink with dirt and debris. Instructed manager to detail clean and maintain at all times.

    Inspector note: Observed excessive clutter and unused equipment in basement dry storage area, leather office chair, holiday decorations and boxes with miscellaneous items stored on floor. Instructed manager to remove any unnecessary items, ORGANIZE, elevate at least 6 inches off the floor and maintained at all times to prevent pest harborage.

Any food handler working in the city of Chicago, unless that person has a valid food service manager certificate is required to meet the food handler training requirement. If someone working in the facility that is not a food handler on a regular basis, but feels in as a food handler when needed, they too must have the food handler training. Must maintain at all times.
