    Inspector note: Observed 2 floor hand sinks with strainer and limes inside basin making inaccessible. Observed no soap or paper towels at both bar hand sinks on 2nd floor. Observed no soap or paper towels at 1st floor bar hand sink; Observed drain lines leading into hand sink from bar drink rail (improper use of hand sink). Observed no soap or paper towel at bar hand sink. Observed no soap at hand sink in dish area; Observed no soap at hand sinks in basement prep area. Instructed all hand sinks must be stocked with soap and paper towels (or hand dryers) at all times. Instructed hand sink may only be used to wash hands. Instructed hand sinks must be easily accessible at all times. Operator provided soap and paper towels for all hand sinks during inspection. Operator removed items stored inside hand sinks. Critical violation 7-38-030.

Instructed must follow an approved method of thawing such as storage in a refrigerator @ 40F or less; under portable running water at a temperature of 70F or below; or in a microwave oven (only when the food will be immediately transferred to a conventional cooking facility to continue the cooking process). Must install splash guard on the left side of exposed hand sink in dish area to prevent contamination (clean dishes stored on a shelf to the left of the sink).
