  Inspector note: Observed improper procedure for thawing potentially hazardous foods. Observed beef sitting in a pan of still wateron counter in prep area. Instructed must use one of the following approved methods for thawing potentially hazardous foods: thawing in a refrigeration unit @ 40F or less; under portable running water at a temperature of 70F or below; or in a microwave oven only when food will be immediately cooked or is in the process of cooking. Operator corrected during inspection by moving frozen beef to walk in cooler. Instructed must not refreeze foods once thawing process has begun. Serious violation 7-38-005(a).
