RAW WOOD SHELVES IN UPPER AND LOWER LEVEL FRONT SERVICE AREAS MUST BE SEALED SO THAT THE THE WOOD IS SMOOTH AND EASILY CLEANABLE. RAW WOOD SHELF ABOVE WALK IN COOLER GLASS DOORS MUST BE SEALED OR PAINTED SO THAT IT IS SMOOTH AND EASILY CLEANABLE.
