    Inspector note: Found store made chorizo hanging on racks in the meat department on site without approved process. Must obtain Chicago Department of Public Health approval or a product assessment must be completed within the past 5 years, and the person in charge has records verifying the PH from a certified lab (and there has been no change in process). Operator voluntarily discarded handing chorizo. No citation issued. Priority foundation violation.

    Inspector note: Observed heavily soiled cardboard liners on shelves in the walk in meat cooler. Instructed cardboard must be removed (not permitted). Instructed all surfaces must be smooth, non-porous and easily cleanable. Operator removed the cardboard from the coolers during inspection.
