    Inspector note: Observed potentially hazardous foods (eggs) at improper temperatures on counter in front prep area. Found eggs ranging in temperature between 48.2F-52.3F. Instructed all potentially hazardous foods must be held at 40F or less or 140F or more at all times. Operator voluntarily discarded denatured foods during inspection. Critical violation 7-38-005(a).

Must post official copy of Chicago food sanitation manager certificate in plain view of customers at all times. Observed no city of Chicago certified food manager on site while potentially hazardous foods (eggs, soups, etc.) are being prepped. Must have a city of Chicago certified food manager on site at all times when potentially hazardous foods are being prepped, cooked and/or served. Serious violation 7-38-012.

    Inspector note: Observed low temperature chemical sanitizing dish machine (in room next to the bar) does not meet the concentration requirements. Observed 0ppm of chlorine concentration when tested water inside dish machine, and inside hypochloride container connected to dish machine. Instructed must meet the concentration requirements for low temperature sanitizing dish machine. Operator provided new container of hypochloride sanitizer during inspection. Observed appropriate concentration of chlorine in machine after new container attached to dish machine. Serious violation 7-38-030.

INSTRUCTED TO DETAIL CLEAN ALL AND MAINTAIN. #34 FOUND THE INTERIOR OF THE FLOOR DRAINS, THE FLOORS IN THE CORNERS AND UNDER/AROUND THE COOLING/COOKING EQUIPMENT IN THE FRONT AND REAR FOOD PREPARATION AREA WITH FOOD, DIRT, DUST AND GREASE BUILD UP. INSTRUCTED TO DETAIL CLEAN AND MAINTAIN THE INTERIOR OF THE FLOOR DRAINS AND FLOORS. #35 FOUND THE WALLS BEHIND THE COOKING EQUIPMENT, FRONT AND REAR FOOD PREPARATION AREA WITH FOOD, DIRT AND DUST BUILD UP. ALSO, THE PIPES ON THE SIDE AND REAR OF THE COOKING EQUIPMENT IN THE FRONT FOOD PREPARATION AREA WITH THICK FOOD, DIRT AND GREASE BUILD UP. INSTRUCTED TO DETAIL CLEAN AND MAINTAIN ALL. Serious violation 7-42-090.
