MANAGEMENT INSTRUCTED THAT HOT WATER ABOVE 110F IS NEEDED TO WASH DISHES AND UTENSILS. MANAGER CALLED A PLUMBER DURING THE INSPECTION TO CHECK THE HOT WATER HEATER. BY THE END OF THE INSPECTION, THE WATER TEMPERATURE WAS OVER 110F AT THE 3 COMPARTMENT SINK. CRITICAL VIOLATION 7-38-030.
