Knives are connected to a (unbolted down) long wire in order to prevent them from going missing. Ensure knives are cleaned and sanitized at least every 4 hours as the only storage avaiable is under the cutting board while attached to a wire. Knives can be cleaned and sanitized in the 3 bay sink or in the high temp machine once repaired. Ensure the cutting board and prep table are also kept clean and sanitized for knife storage. • Pizza cutter stored in stagnant water / Discontinue and store as described below.
