Per an interview with the PIC chicken that was in the process of being removed from the grill would be cut up and placed in hot holding. At the time the chicken was removed from the grill and placed in a metal pan to be cut up the product had an internal temperature of 153-155F Employees must ensure chicken reaches a minimum internal temperature of 165F or above before removing from the grill. Product was placed back on the grill and continued cooking to 171F
