Cold HoldingcriticalInspector note: Several packages of cooked chicken patties inside of the open air deli cooler with elevated temperatures of 54-55F. PIC stated that the cooked patties had been in the refrigeration unit from the previous night. Open air-cooler was operating at 37F and other packages of cooked patties were at 37F. Ensure all potentially hazardous foods are being maintained at 41F and below. All patties that had elevated temperatures and in the unit from the previous night were voluntarily discarded and denatured at the time of the inspection.
