Inadequate Facilities/Cooling MethodsInspector note: The sauce is sitting on the counter cooling at room temperature. The chef says that the sauce only sits out for 6 hours every day the temperature at the time of the inspection was 147F. Provide equipment to either maintain the sauce hot or cold or provide procedures for time as a public health control that include no more than four hours for an item coming out of hot holding. The cooling described for the sauce is putting deep containers into the walk-in to cool. Provide proper cooling methods to be sure items cool from 140F to 70F in two hours and then from 70F to 41F in an additional four hours.
