Hot HoldingcriticalInspector note: Beef and lamb being on an open air vertical broiler at 126F at the begining of the inspection. A tempertature was taken at the end of the inspection as well before Azamar opened to the public and the final temperatures reached well over 148F. Ensure prpoer cooking prcedures are followed before serving to the public and provide all the procedures that beef and lamb go through to the Health Department for further review.
