Inspector note: Banana and rice at 56F noodles and ham at 53F beef shrimp spring rolls at 54F duck feet at 51F rice and chicken at 68F rice and sausage at 78F pork wrapped in banana leaves at 76F rice and ham at 60F rice and taro at 116F. Pic Angela stated that all PHF'S had been out for 2 and a half hours. Foods removed and put in cold holding unit to maintain a temperature of 41F and below. • Chicken on hot holding line at 100F pork at 120F. PIC Angela stated foods had been out for about 2 hrs.. Foods were re-heated to 165F to ensure no bacterial growth.
