Pic Angela stated that all PHF'S had been out for 2 and a half hours. Foods removed and put in cold holding unit to maintain a temperature of 41F and below. • Chicken on hot holding line at 100F pork at 120F. PIC Angela stated foods had been out for about 2 hrs.. Foods were re-heated to 165F to ensure no bacterial growth.
