    Inspector note: Observed no sanitizer buckets being used. Observed soiled wiping clothes on the counter. Ensure staff is setting up sanitizer buckets and storing the wiping clothes inside. PIC was able to set a bucket up and we tested it 50ppm.

    Inspector note: Observed heavy grease build up inside the bottom of the fryolators. Clean to remove grease build up.

    Inspector note: Observed kitchen knife being stored in the flip top refrigeration unit. PIC removed the knife and placed it in the warewash area. Ensure staff is properly storing utensils.

    Inspector note: Observed a roach on the basement floor at the bottom of the stairs. PIC was able to provide 2 recent pest reports. On 10/23/25 exterminator states he caught a rodent in the kitchen. At today's inspection I did not observe any rodent droppings. Recommend more frequent vists from your exterminator until the report is free and clean. No activity/no catches.
